The second of Thom's Tables in the ongoing
series for spring, summer and fall dining out nights will be presented at Darling's "Flagship Diner" at The Piazza at Schmidt's, 1033 North 2nd Street, Northern Liberties, where we'll be serving a special menu created by Executive
Chef Laurence Wallace at 7:00 p.m., May
26, prix fixe, three course dinner with wine bar, for $45 per person, not including
beverages, tax and gratuity.
Before and
between courses, Wallace will talk about his theory
of cooking, share techniques that he
employs that will be of interest and help to home chefs (or just to diners,
like me, who truly enjoy dining out), the approach
to incorporating ingredients and elements of different
cuisines and food traditions into one dish, the art
of crafting an entire dinner menu for
an evening, and perhaps offer a few trade
secrets from a professionally trained and accomplished executive chef.
The final
course will be presented by co-owner/founder of "Best of Philly" Darling's
Cafe's Harry Arnold who will delight diners with a dessert tasting of cheesecakes, tiramisu
and apple pie, all made on the
premises. Arnold promised that he'll even share a few
trade secrets about making a fabulous, tasty, and light cheesecake.
Guests
can reserve their own tables or attend as
singles, meet fellow foodies and
dine at some of the "communal
tables" that Thom
Cardwell will be hosting, along with some other special guests, as part of
the experience of Thom's Table: Celebrating the Art of the Meal.

About Executive Chef Laurence Wallace: Wallace, a
graduate of the prestigious culinary institute, Johnson & Wales College,
has garnered praise and a reputation from restaurant and food industry leaders
for his team management and leadership skills. He has been recognized for his
ability to "provide insight to directing and developing strong and effective
cooking teams to aggressively increase various creative menu & food
presentations which increased sales & revenues at various
organizations." His impressive resume
includes organizations across the country, including: "Petroleum Club, Houston, Boca Raton Hotel
& Beach Club, Florida, La Vielle Maison Boca Raton, Florida, Stockton Inn,
New Jersey and Doubletree Hotel, Philadelphia. He currently oversees the
diner and both locations for Darling's Cafes in Center City.
